I love to do nice crunchy roast potatoes done in the oven in a little olive oil and whatever chopped fresh herbs I have on hand.
Mmmmmmm. I am making myself hungry and it's only breakfast time LOL.

Love potatoes so any way is fine with me. I like to cut up some potatoes & onions, microwave them for a few minutes then add them to a pan of browned maple sausage and let them cook for a while, then serve with ketchup.

Some other way--I like to brine potatoes in salted water, then dry, rub with olive oil, coat with sea salt and pepper and bake @ 400 degrees for an hour! Cut them open and add butter, salt, pepper and sour cream with chives..yummo.

Then add their best buddies-rare rib eye or smoked prime rib, mushrooms smothered in garlic butter, creamed spinach and homemade bread. A nice salad is good also!

Of course, DH can make some wonderful homemade French fries..their best bud is thin cut fried catfish or blackened catfish!

Susanne..that sounds yummy. I must admit, I am a potato fan-mashed, smothered, hash brown, roasted, etc. Don't think I've met a potato I wouldn't befriend and devour!

Never heard of a brine potato? Does it give a nice flavor/crust to the potato?

I love potatoes too, I slice potatoes and onions and zap in the microwave then throw on the bbq flat plate and toss around till cooked. Yum.

Never thought to brine a potato. I do brine chicken breasts. I like the sound of those potatoes. I also super like the buddies too lol. yum.I need to work out what is for dinner. homemade fries/chips are the best too.

Best part of potatoes in foil is you can do them for a party and transfer to a slowcooker to keep warm for ages. People can just serve themselves from there.
