I like to thaw overnight in the fridge also but if I'm in a pinch I'll thaw on the counter. Thanks for the tip on seafood, going to try that next time I'm making shrimp or fish!

I tried to but if I've forgotton to take something out I'll thaw on the counter. I know bad to do but I do watch whatever I'm thawing and put in fridge when still a bit frozen so it doesn't get warm.

I try to thaw in the fridge when I have enough time. Thawing a rack of lamb in the fridge right now. I do use the counter or in the sink if stuck. So far no problems with either.

That's how my grandmother and mother thawed meats and we never got sick.
