Yes, ds asked me to make a pumpkin roll the other day. Made it and only have about half left. He wants to try a pumpkin cheese cake next!

I've never made a cheesecake before. I was going to try a pumpkin version last Thanksgiving until I realized you need a springform pan for it. (I don't have one.) I've been looking at the thrift store every time I go, but still haven't come across one. I might have to just bite the bullet and buy a new one.

Kellie you can actually use an oversized quiche dish if you have one and just adjust the quantities. It just gets a little more messed up to serve. But hey it is going to be eaten so who cares as long as it tastes good. A big pie dish works as well.

You just reminded me that I need a new spring pan! The last time I used it it leaked out the bottom.

Oh yuk. Now you have me thinking. Not sure if I have one. I did get a deep sided bakers secret one with those holes in the base for making pie crust, translate that to lemon meringue pie, but was not thrilled with it. Not sure if I ever replaced it.

Well this is a new one for me, but I'm willing to try anything with "margarita" in the name. You know, in the name of research. :-)
