Thought we could post our favorite fruit and veggie recipes or even a recipe you haven't tried but want to.

This is one of my favorites and so easy!

Cucumbers with Chive and Dill Sauce

1/2C mayo

1/2C sour cream

2TBS. chopped chives

2TBS. fresh dill chopped

2-3 cucumbers

Mix all and pour over cucumbers and chill until ready to serve.

Note: You can use light mayo and sour cream...

This is one of ds favorites, made it the Tuesday night for him.

Stuffed Zucchini

7-8 oz. package chicken flavored rice mix

4 medium zucchini

1/2 cup shredded  cheese

Prepare rice according to directions.

Wash zucchini and cut length wise, wrap in foil and bake until tender.

Using spoon scoop out and discard seeds from zucchini, leaving shells about 1/4" to 1/2" thick.

Arrange in a row in greased 13x9" baking dish.

Pile rice into zucchini; top each with cheese.

Bake 10 minutes, or until cheese melts and rice is heated through.

I wish I had some tomatoes to do it with for tonight. Unfortunately I don't. Love that you can serve at any temperature. Holiday here today but when I am back on the laptop I will post some more recipes so stay posted.

If you are feeding a crowd and some with plates on their knees etc it is so much easier to eat (and serve) a potato bake that is in cubes just using a fork. I have been cutting mine into cubes for years. Guess I should post my potato bake in this thread too. Lol.

Suzi’s Potato Bake

5 kg/10lb roasting potatoes, peeled and cut into LARGE dice.

6 slices of bacon, diced.

1 red capsicum,(bell pepper), diced

2 cups grated cheese, mix cheddar / mozzarella (others are ok)

4 green onions chopped .

2 cups thickened (whipping) cream.(can use just about any cream)  

Spray a 23c33cm/9x13” pan with non stick spray, Spread out the potatoes, then top with the bacon and pepper. Top with the cheese and green onions. Finally pour over the cream.

Bake hot oven approx 40 minutes until the potato is cooked and it is nice and brown. 

Note...bacon and red bell peppers are optional.
