Might try this soon Suzi. Sounds good and easy enough to skip the butter and use light sour cream. Here I would have to make that 2 tablespoons of curry!

Lo posted this ages ago and I saved it. I used regular peanuts. You can do all the saute in a little olive oil if you like. Oh and yes I did increase the curry powder but that is just me. Also last time I had some dried apricots to use up, so soaked in a little sherry then tossed them in too. Nice and easy to make with a cooked chicken.

Duh..I thought that recipe read familiar..hee hee..cocktail peanuts are regular canned peanuts as opposed to dry roasted peanuts. Here are my other notes on the recipe...

You can cook this recipe using whole pieces of chicken (breasts or thighs are best) that have been dredged in flour and browned in butter/oil. If you do, simmer the browned chicken with the vegetables and then simmer in the soup for 30-45 minutes until it is fully cooked before adding the apples, etc.

Lo you sure should recognise it.I made it several times and saved it from when you posted it a long time ago. I also made it with cashews instead of the peanuts.. I have to confess to usually making it with a cooked deli chicken...just being lazy. Lol. I have actually quite a bunch of your recipes saved, nice to have tried and true. Thanks for posting them, keep it up...smile!

Yea! I love to share recipes and watch them evolve through additions and deletions!! I have never quite understood the "secret" recipe phenomenon-what's the point!

I do understand it if it is an old family recipe passed down for generations that someone wants to keep as a family thing, but other than that...post away. You never know as I sort my recipes you just may see more of yours here. Check out Donna,s bruschetta one I reposted. It's yum.

Post away-I am happy if my recipes are enjoyed-it did take me aback at first-to think-what are the chances of you having two friends named Laney with curry recipes...and then..duh..I realized it was me..HaHa--I may not be the sharpest tack in the box, but I do have a point..LOL
