Which Italian foods do you like? Is there one that is a favourite?
Pasta.

I'd have to say pasta is my favorite now because I found a wonderful brown rice pasta. I love pizza but have to be very careful. I've never had gnocchi.

Oh I so pleased to hear you found that rice pasta. That gives you lots of options. Gnocchi is based on potato and takes on heaps of flavour from ingredients around it especially the sauce. We probably only have it about once every couple of weeks, while pasta is on the menu more often. I love pizza and we used to have it about once a week as my night off cooking but have not had it for a while. Might aim for next thursday night to give me something to look forward to. What sort of sauce do you like with that pasta?

I've gotten where I'll add Cream of Chicken soup and either ground turkey or cut up chicken to the pasta. I also use the rice pasta to make a quick soup for lunch. Chicken bouillon cube, rice pasta, canned chicken, cut up chicken or ground turkey, seasoning and maybe a handful of frozen peas.

I have to say that given the restrictions of your diet you are managing to put together lots of things. Hopefully soon you might be able to add some cheese back in there. I would find giving that up soooooooo hard.

Pasta would be my favorite with pizza second. I have never had risotto (though it looks good when the tv chefs make it). I make manicotti for a bit of variety and just the other night tried spinach and tomato flavored pasta with a Marinara sauce, but the flavor was a bit strong and took away from the sauce's flavor.

Mine would be pasta or pizza...Don't eat much pasta now but do make home made pizza so I can still have pizza.

I have added back some sharp Cheddar. My biggest "miss" is bread. I tried adding back the spelt bread that I'd eaten for years and that didn't work well. I've tried the gluten free bread but that contains soy which doesn't work for me. I'm hoping that I'll be able to go back to the spelt bread later.

I'm with you on the supreme with anchovies. Yum. I have not made pizza much lately as DH is on a super thin crust kick, and mine (or more precisely kim's recipe) is not that thin, at least I can't get it that thin. I am hoping DH has some money in his wallet Thursday night this week so I can twist his arm for pizza......and maybe a nice bottle of red!

Manicotti is great but I often end up splitting it...probably in too much of a hurry, or trying to overfill. Lately have been making oversized ravioli and you only need a few for a meal. Looks so pretty in a plc a. I use a kind of flat bottom wide soup bowl so I can include plenty of sauce. They freeze great too.
