Pizza Salad

500g/1lb small shell pasta

1 red capsicum/bell pepper, chopped

1 green capsicum/bell pepper, chopped

1 tomato, chopped

5 green onions, chopped

1 125g/4oz can sliced mushrooms, drained

90g/3oz sliced pepperoni 

1/2 cup black kalamata olives

2 cloves garlic, crushed

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 cup Italian salad dressing

1 cup shredded mozzerella cheese

2 tablespoons grated Parmesan cheese

Cook pasta until al dente, rinse under cold water and drain.

Combine the pasta with all but the dressing and cheeses.Toss together and refrigerate until chilled.

Before serving, add dressing and cheese. Toss to mix together well.

This would taste fabulous Kim .. SO TASTY! Thanks for sharing the recipe. With Summer BBQ's around the corner I can see me making this for sure. My guys will love it!

I leave out the mushrooms or add fresh Swiss ones sliced just before serving. Also now with those packets of grated cheese mixes I just throw in a handful of one of those. To look pretty just add some freshly shaved Parmesan on top. I was going to make for fathers day picnic, but now we are not having a picnic so it will have to wait.
