Potato Salad recipe

 Potato Salad

2 pounds medium-sized red potatoes -- unpeeled

1/3 cup thinly sliced celery

1/3 cup finely chopped onion

3 tablespoon sweet pickle relish

Dressing

1/3 cup light mayonnaise

1/3 cup light sour cream

2 tablespoons spicy mustard

1/4 teaspoon ground black pepper

Chopped potatoes into bite size pieces and cook until tender, drain. Let cool about half hour. Add the celery, onion, and relish, and toss gently to mix. Combine the dressing ingredients in a small bowl, and stir to mix well. Add the dressing to the potato mixture, and mix. Cover the salad and chill for at least 4 hours before serving.

It has been so long since I have eaten yet alone made a potato salad. If I don't have any pickle juice I don't make it. It is the must have ingredient. Father's day is coming up here and we might be doing a picnic at the zoo so I might be making this sooner rather than later. For some reason have been having more pasta salad rather than potato. Sounds yum.

Maybe you could make a small amount just for you and keep it in the fridge for a few days having a little each day.

Lol. Might be nice while you still have warm weather, but beware I am just waiting to steal that weather from you soon...smile. Had enough cold.

Susanne cut the recipe in half and make it for yourself. I love potato salad too and often just make half a batch.

I've only made potato salad once this year, not sure why but like you have been making pasta salad more often. Think I'll add this to next weeks menu!

I prefer warm potato salad over cold and this year I have  made it twice.  I have this lovely butter, dill, mustard  recipe which I love and it goes well with salmon,  chicken or pork.

Smileycons!  I love potato salads, but don't make them much because no one else eats them here.  But I think I may try to make a very small amount just for me for a couple days of eating.  I like to put lots of stuff in mine though.  Smileycons!
