Potato Side Dish

I know that I asked for help last year....and someone gave me a nice potato side dish recipe that I used last Thanksgiving...but I can't find it.  In any case, I often make roasted potatoes with onions as a side dish but I'd like to do something different for Thanksgiving.  It's just DH and myself for the holiday and, since we own a fitness Studio and he's a Personal Trainer, he doesn't like anything creamy, with butter, etc. so I'm kind of limited.  I'll sometimes make myself mashed potatoes, but just for me.

If anyone has an idea it would be much appreciated.  Thanks so much.

Morning...Have you thought about using sweet potatoes or mashed califlower. With the califlower you can add seasonings, herbs and/or cheese. Here's a recipe you might like...

Lemony Asparagus and New Potatoes (recipe from BH&G)
1-1/2 pounds fresh asparagus spears

16 whole tiny new potatoes, unpeeled and cut into quarters

4 teaspoons olive oil or cooking oil

1 teaspoon finely shredded lemon peel

1/2 teaspoon salt

1/2 teaspoon dried thyme, crushed

Fresh thyme (optional)


1. Snap off and discard woody bases from fresh asparagus. If desired,
scrape off scales. Cut into 2-inch pieces. Set aside.

2. In a 2-quart saucepan cook the potatoes, covered, in a small amount
of boiling water for 12 minutes. Add asparagus. Cook, covered, about 4
minutes more or until asparagus is crisp-tender and potatoes are
tender; drain. Transfer to a serving bowl.

3. Meanwhile, for dressing, combine the olive oil, shredded lemon peel,
salt, and thyme. Add to the vegetables, tossing gently to coat. If
desired, garnish with sprigs of thyme. Serve warm. Makes 8 side-dish
servings Make-Ahead Tips: Prepare dressing; cover and chill up to 24 hours.
Let stand at room temperature 30 minutes before using.

Thanks so much Kim....I love this!!  We do use a lot of asparagus so combined with the potatoes it will make a nice, light side dish.  According to DH he's content with just turkey and stuffing...but I'm not....LOL....
