Pumpkin & Sausage Penne
(recipe from Stop&Shop Magazine)

Box Penne Pasta

12 oz package of sausage

2 TBLS olive oil

1 small onion, finely chopped

3 cloves garlic, chopped

1 1/2 cups chicken broth

1/2 cup evaporated milk

15oz can pumpkin

1/8 teas. nutmeg

1/8 teas. cinnamon

1/4 teas. black pepper

10 oz bag fresh baby spinach

1/2 cup sour cream

Cook pasta and drain...Slice sausage, heat oil in skillet and cook sausages and onions, add garlic and cook 3 minutes. Add broth, milk, pumpkin, spices and pepper. Bring to a boil and then reduce heat to low, allow liquid to thicken slightly. Add spinach and stir until willed. Mix in sour cream and remove from heat, toss sauce with pasta and serve.
