Suzi’s Potato Bake

5 kg/10lb roasting potatoes, peeled and cut into LARGE dice.

6 slices of bacon, diced.

1 red capsicum,(bell pepper), diced

2 cups grated cheese, mix cheddar / mozzarella (others are ok)

4 green onions chopped .

2 cups thickened (whipping) cream.(can use just about any cream)

Spray a 23c33cm/9x13” pan with non stick spray, Spread out the potatoes, then top with the bacon and pepper. Top with the cheese and green onions. Finally pour over the cream.

Bake hot oven approx 40 minutes until the potato is cooked and it is nice and brown. Just throw it in while you do the roast or the bbq.

It holds heat so great to take anywhere. When you get caught without enough cream add a bit of milk, can be made with sour cream too.

Note: I add a little more cheese on top in the last 5 minutes. If in a hurry I steam the potatoes lightly before throwing the whole thing together.

I used to slice the potatoes in thin slices but found the large dice was easier for people to eat with a fork, especially if trying to stand and eat at a party.....no cutting up.

How many people does this serve? It says 10lbs of potatoes & a 9x13 pan? Is that right? Seems like it would make several pans or something much larger than 9x13...
Sounds delicious, though & I'll have to try it!

I make this all the time and do use the 5kg, close enough to 10lb, mind you this is so flexible you could cut that a lot. OK just checked my pan. Mind is actually a little wider than the 9" and it is deeper than the usual one. Probably closer to 3 " deep. It does cook down while baking. You could make it in a large baking dish, and of course it halves easily. Oh and reheats really well the next day or two.
