Suzi’s Potato Bake
5 kg/10lb roasting potatoes, peeled and cut into LARGE dice.
6 slices of bacon, diced.
1 red capsicum,(bell pepper), diced
2 cups grated cheese, mix cheddar / mozzarella (others are ok)
4 green onions chopped .
2 cups thickened (whipping) cream.(can use just about any cream)
Spray a 23c33cm/9x13” pan with non stick spray, Spread out the potatoes, then top with the bacon and pepper. Top with the cheese and green onions. Finally pour over the cream.
Bake hot oven approx 40 minutes until the potato is cooked and it is nice and brown. Just throw it in while you do the roast or the bbq.
It holds heat so great to take anywhere. When you get caught without enough cream add a bit of milk, can be made with sour cream too.
Note: I add a little more cheese on top in the last 5 minutes. If in a hurry I steam the potatoes lightly before throwing the whole thing together.
