Veggies for breakfast?

Nobody ever said you had to have traditional "breakfast foods" for breakfast.

I don't really fix veggies for breakfast, per se, but I love leftovers for breakfast& that includes veggies. Sweet potatoes, potato salad, cauliflower, baked potatoes, corn on the cob...yep, lots of good veggie choices for my breakfast!

Once in awhile I bake a sweet potato and put some butter on it for breakfast. I think they're good that way.

Over the weekend I made little kale & mushroom hand pies. I sauteed the kale and mushrooms with onion, then braised it for awhile in a little chicken broth. I used store-bought pie dough and piled the veggie mix into little pieces of it, topped it with cheese and another piece of dough and sealed the edges. Brush the tops with egg and bake at 350 until brown. They were really yummy!

Not really on fixing vegetables differently and truth is I don't eat vegetables for breakfast often .. more out of laziness than anything else.

Mostly just in omlettes, quiche or peppers and onions in fried potatoes.
