THREE MEAT STEW
Makes 8 servings.
1/2 tsp black pepper
1/2 tsp thyme, chopped
2 cans 15 oz each cannellini beans, drained, rinsed
1 bay leaf
1 tbs tomato paste
2 pounds chicken thighs, skin removed
1 1/2 cups low sodium chicken broth
2 cloves garlic, crushed
1/2 tsp salt
1/2 pound kielbasa sausage, halved lengthwise, cut into slices
1 cup breadcrumbs
2 sprigs thyme
1 pound boneless pork shoulder, cut into pieces
1 cup white wine
14.5 oz can diced tomatoes, drained
1 onion, chopped
In a slow cooker, combine onion, garlic, tomatoes, broth, wine, chicken, pork, tomato paste, thyme sprigs, and bay leaf. Cook on high 4 hours or low 7 1/2 hours.
Stir in 3/4 cup breadcrumbs, beans, sausage, chopped thyme, salt and pepper, remove thyme sprigs and bay leaf, discard. Sprinkle each serving with 1/2 tbs breadcrumbs and serve.
