Bacon Bread Pudding

Bacon Bread Pudding

Makes 8 servings.

1 loaf brioche or challah bread, cubed
1/2 tsp salt
6 oz sharp cheddar cheese, shredded
4 eggs
1/4 tsp pepper
1/2 cup sliced green onions
2 cups milk
6 slices bacon, diced

Heat oven to 350 degrees.  In a skillet, cook bacon until crispy.  Remove, set aside.  In a bowl, whisk together eggs and milk.  Stir in bacon, cheese, green onions, salt and pepper.  Stir in bread cubes.  Set aside 10 min. stirring to coat with egg mixture.  Transfer bread egg mixture to a baking dish.  Cover with foil. Bake 35 min.  Remove foil, bake another 15 minutes or until browned and eggs are set.  Allow bread pudding to cool 10 min. before serving...
