Cranberry Muffins
Serving Size: 2 dozen

1 1/2 c cranberries, halved
1 c conf. sugar
4 c flour
6 t baking powder
1 t salt
1/2 c sugar
2 eggs, beaten
2 c milk
1/2 c butter, melted

Toss cranberries with conf. sugar and set aside. Sift dry ingredients together and make a small well in mixture. Add eggs, milk and butter all at once. Stir lightly till dry ingredients are moist. DO NOT BEAT Fold in berries and pour into greased muffin pans 2/3 full. Bake at 350° for 30 min.
