Mozzarella Toast

8 slices French or Italian bread, sliced about 1/4" thick
2 tbs. extra virgin olive oil
2 crushed cloves of garlic
l/2 c. shredded mozzarella cheese

Place bread on cookie sheet and toast one side under broiler. Turn slices over. Brush with oil and garlic. Sprinkle on mozzarella cheese. Broil till cheese melts, about 3 min.

You can add more garlic or more cheese, even more oil, according to your taste.

They both look good..... but I'm wondering how in the world you cut bread to 1/4 inch in the first recipe? Those are some awfully thin slices!! =)

That sounds so good! Here's a similar one I've been meaning to try:

Fresh Tomato and Mozzarella on Toast

2 baguette (french, sliced)
2 sliced tomatoes
2 cups shredded mozzarella cheese 
italian seasoning
olive oil balsamic vinegar

1 To prepare, slice tomatoes and french bread.

2 Toast the slices of french bread in the toaster.

3 Place the toasted french bread pieces on aluminum foil or baking pan.

4 Put one layer of tomato slices on each piece of french bread (usually 1 1/2 to 2 tomato slices for each piece of toast).

5 Sprinkle mozzarella cheese on top of each piece.

6 Bake in toaster oven until cheese is melted.

7 Take out of oven and drizzle a small amount of olive oil and balsamic vinegar on top.

8 Sprinkle Italian seasoning and salt and pepper to taste, on top.
