Baked Zucchini Squares

13 Breton Crackers
1/3 cup grated parmesan cheese
1 tsp paprika
3 cups coarsely chopped onion
2 cups sliced mushrooms
1 lb. zucchini, diced (3 medium)
salt and pepper
3 eggs
1 cup sour cream
3/4 cup milk
3 tbsp horseradish
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt

Crush crackers to make 2/3 cup cracker crumbs. Combine crumbs, cheese and paprika.  Spread half in well greased 13 x 9 baking pan. Saute onions, mushrooms and zucchini until tender crisp (about 10 minutes). Drain off excess liquid.  Season well .

Beat eggs, sour cream, milk and horseradish together. Add flour, baking powder and salt. Beat until smooth. Stir in vegetable mixture. Turn into prepared pan , spreading evenly. Sprinkle with remaining crumbs.

Bake @375 F for 20 - 25 min or until set. Let stand 10 min before cutting into squares.
