Pepper and Cheese Squares

Pepper and Cheese Squares
makes 20 (1 inch) square servings

6 eggs
1 5 oz can whole evaporated milk, undiluted
1 lb Monterey Jack Cheese - shredded
1 lb sharp cheddar cheese (I used a reduced-fat cheese)
2 - 4 oz. Cans chopped green chilies
(optional; 3 or 4 chopped jalapeno peppers. I did not use these)

Beat eggs well with a fork. Add evaporated milk, both cheeses and mix well. Pour ½ of the mixture into a buttered 9”X13” baking dish. Sprinkle with green chilies and jalapeno peppers, if you wish to use them. Pour remaining cheese mixture over. Bake at 350 degrees for 40 minutes. Cool slightly and cut into 1’ squares. Garnish with paprika (or cayenne pepper if you like it hot).
