Tomato Tart

Hi -

I saw this recipe in a magazine, I think Redbook. 

1 puff pastry sheet, cooked 12 minutes
1 Cup Ricotta Cheese
1TBS lemon zest 
½tsp salt
½tsp pepper
Fresh Basil 

Cook and cool pastry. Mix cheese, zest, salt, and pepper. Spread on cooled pastry. Top with tomato slices, basil leaves, drizzle olive oil, and salt and pepper. 

It came out ok. I feel like it was missing something or something wasn't right. Maybe the taste of the cold cheese? I normally like it hot (like in Italian dishes such as ziti). My husband felt there was too much lemon (he doesn't like lemon to begin with). 

Thoughts on how to change it?

Hello there, Olivia!  Great to see you here...

Oh boy... I am with your hubby... not a huge lemon fan and that would probably would have been too lemony for me too.  I am also not a fan of ricotta cheese... it doesn't have much flavor so I would have seasoned it up with some tomato paste or sauce and probably more salt. 

Actually, I probably would have left off the ricotta and added some mozzarella instead... lol.
