Christmas Apple Pie Cookies

Christmas Apple  Pie  Cookies

Makes 2 1/2 dozen cookies

1 stick unsalted butter

4 oz 1/2 pkg cream cheese

1 tbs sugar

1/2 tsp vanilla

1/8 tsp salt

1 cup plus 2 tbs flour

3 apples, peeled, cored, finely chopped

1/4 cup light brown sugar

4 tbs unsalted butter

1/2 tsp apple pie spice

1 egg white, beaten

1/4 cup powdered sugar

1 1/2 tbs heavy cream

Red and Green sugar sprinkles


Cream butter, cream cheese and sugar.  Add vanilla and salt then mix
until blended.  Mix in flour until incorporated.  Shape into a 5" square. Wrap in plastic wrap, refrigerate 30 min. Heat oven to 325 degrees.

Line 1 cookie sheets with parchment.  In a skillet, cook apples, brown sugar, butter and apple pie spice 10 minutes.  Refrigerate 30 minutes. 

On a floured surface, cut dough into 4 strips.  Working with 1 strip at a time, roll out to a 5x10" rectangle, spoon one quarter of the apple filling lengthwise down center.


Brush short edges and 1 long edge with egg white.  Fold long edge over to meet the other edge, seal, then trim edges.  Transfer to pan, crimp seams.  Repeat with remaining dough and filling then prick tops with fork.  Bake until golden (around 50 minutes).  Let cool on pan 20 minutes.

In a bowl, whisk powdered sugar and cream.  Brush over warm dough pockets, top with sprinkles.  Let cool, cut crosswise into 1" pieces, then
serve.
