Peanut Butter Pie

Peanut Butter Pie

Makes 10 dessert servings.

Chopped peanuts
1 tbs vanilla
3/4 cup crunchy peanut butter
4 cups low fat milk
1/3 cup cornstarch
9" piecrust
Whipped Cream
3 tbs butter or margarine
4 egg yolks, beaten
1 tsp salt
3/4 cup sugar or sub

Heat oven to 450 degrees. Place piecrust in 9" pie plate, bake as label directs. In saucepan, stir together sugar, cornstarch and salt. In bowl, whisk milk and egg yolks until blended, whisk in sugar mixture. Heat until mixture thickens and boils. Boil 1 min.

Remove from heat, stir in peanut butter and vanilla until blended. Pour peanut butter mixture into baked pie shell, press plastic wrap onto surface of filling. Refrigerate pie 4 hours or until chilled and set. To serve --- Top with whipped cream and garnish with chopped peanuts.
