Bacon and Cheese Wrapped Chicken Breasts

chicken breasts
8 pieces of bacon per chicken breast
8 oz. cream cheese, softened
2 c. cheddar cheese, shredded
garlic salt, to taste

Mix cream cheese and garlic salt. 

Lay out 4 pieces of bacon, in a row, with 4 more pieces of bacon in a row facing the other way.


Flatten chicken breasts with meat mallet.   Lay the flattened breast in the middle of the bacon.   Season with salt, pepper, seasoned salt, whatever you like.  Top the chicken with the cream cheese mixture.   Add some shredded cheese. 

Fold up the bacon to cover the chicken.   Secure with a toothpick. 

Lay chicken on top of a greased pan or greased aluminum foil on a baking sheet.  

Bake at 400° for 45 minutes, flipping over at the halfway mark.   Right before you take it out, flip the oven to broil and crisp the bacon.  Watch closely so it doesn't burn.

This is what I made last night.   Delish.   I used turkey bacon and the reduced fat cream cheese.   And just a sprinkle of cheddar.
