BAKED PASTA WITH SAUSAGE
2 oz Parmesan cheese, grated
1 cup part skim ricotta cheese
1/2 tsp crushed red pepper flakes
1 tbs flour
2 large cloves garlic, finely chopped
1 large onion, chopped
3 tbs olive oil
1 medium bunch kale, stems discarded, leaves cut into 2" pieces
4 oz part skim mozzarella cheese, shredded
14.5 oz can diced tomatoes, drained
1 cup 1% milk
Salt and Pepper
20 oz pkg turkey Italian sausage, casings removed
1 pound whole wheat penne or other short pasta
Heat oven to 350 degrees. Cook pasta according to package directions, adding kale during last 3 min. of cooking. Drain pasta and kale, return it to pot. Heat 1 tbs oil in a skillet. Add sausage, cook until beginning to brown, transfer to a bowl. Add onion and remaining oil to skillet, season with salt and pepper, cook covered until tender.
Stir in garlic, cook 1 min. Sprinkle flour over onion mixture, cook 1 min. add milk. Simmer until slightly thickened, stir in red pepper. Add sauce to pasta and kale, toss. Add sausage, tomatoes, ricotta and mozzarella, toss. Transfer pasta mixture to a casserole dish. Sprinkle with Parmesan, bake until heated through and golden brown 25 min. then serve. Makes 6 servings.
