CARROT & PORK KEBABS

1/2 cup apricot preserves
2 tbs white or red wine vinegar
1 tbs grated ginger
3 large carrots, peeled, cut into 1 1/2" pieces
1 1/4 pounds boneless pork loin, cut into 1 1/2" pieces
1 tbs olive oil
Salt and Black pepper

In a bowl, whisk together preserves, vinegar, and ginger. Boil carrots until barely tender, drain. Thread carrots and pork onto skewers, place on a foil lined baking sheet. Brush kebabs with oil, season with salt and pepper. Broil until cooked through, basting with apricot mixture during last 3 min. of cooking. Serve with couscous if desired...MAKES 4 SERVINGS OF KEBABS.
