Chicken and Artichokes

2 cans artichoke hearts, drained and quartered (14 oz. each)
1 1/2 T. lemon juice
4 cups cooked chicken, cubed
12 oz. fresh mushrooms, sliced, sautéed and drained
1/4 cup margarine
1/4 cup flour
1/2 t. salt
1/2 t. dried thyme
1/4 t. ground nutmeg
2 cups milk
1 chicken bouillon cube
1 1/2 cups shredded cheddar cheese
1/3 cup crumbled blue cheese

Place artichoke hearts in shallow baking dish; sprinkle with lemon juice. Add chicken and mushrooms. In a pan, melt margarine; add flour and seasonings. Cook until frothy. Stir in milk and bouillon; cook until thickened. Stir in cheeses until melted. Pour over chicken. Bake at 350 for 35 minutes. Serves 6 to 8
