Crispy Ranch Chicken
4 skinless, boneless chicken breast halves (you can use any kind)
1/2 cup mayonnaise
1 packet of Hidden Valley Ranch Salad Dressing and Seasoning Mix
3/4 cup seasoned breadcrumbs
Preheat the oven to 400 degrees.
In a shallow bowl, mix the mayonnaise with the Hidden Valley ® Salad Dressing and Seasoning Mix.
In a second shallow bowl, place the breadcrumbs.
Dip each chicken breast in the ranch dressing mixture, removing any excess, and then dip in breadcrumbs.
Place them on a parchment-lined baking sheet until chicken is cooked through, about 25 minutes.

I've made this before. It turns out really good! You can even substitute plain yogurt for mayonnaise to make it a bit healthier. If you do the substitution, you have to lower your oven temp. Cooking with yogurt requires a lower temp (under 325 or so). It will add to the cook time by 10 to 15 min. I just use a meat thermometer to be sure it's done.
