Roasted Pork w/Potatoes

1 1/4 pounds pork tenderloin
1 tsp Dijon mustard
1/2 cup balsamic vinegar
2 tbs fat free Greek yogurt
8 sprigs thyme
1 pound sweet potatoes, peeled, cut into 2" pieces
1 tbs olive oil
2 tbs apricot jam
Salt and Pepper
1 clove garlic, smashed
1/2 pound parsnips, peeled, cut into 2" pieces

Heat oven to 400 degrees. Place sweet potatoes, parsnips, thyme and garlic in a saucepan. Cover with water, bring to a boil. Reduce heat, simmer covered until vegetables are tender. Discard thyme. Reserve 1/4 cup of cooking water, drain vegetables, return them to pot. Mash with yogurt and pepper, adding cooking water if mixture seems dry. In a bowl, whisk together vinegar, jam and mustard. Heat oil in a skillet.

Season pork with salt and pepper, cook until browned on all sides. Transfer to a baking sheet, roast until done 15 min. Transfer to a cutting board, let rest 5 min. before slicing. Add vinegar mixture to skillet, cook until jam melts and mixture is syrupy. Serve with pork and vegetable mash...MAKES 4 SERVINGS.
