Eggs??

I bought an 18 pack of eggs today because they were only $1.99 on sale. The problem is that when I got home, I discovered that had another whole dozen and a pack that still has three eggs in it. Help! What do I do with 23 eggs??

Keep in mind that I'm on a low fat, low calorie diet. So, while I still eat eggs regularly, making a big batch of egg salad isn't a good option. Ideas?

The only thing that comes to mind is hard boiled eggs (can you dye Thanksgiving eggs? LOL) or a breakfast casserole.

My first thought was Deviled Eggs, but that probably doesn't go along with your diet huh???

I do love deviled eggs, shelly! I'll had to see if I can find a lowfat recipe on weight watchers.

Susan, I do have a great breakfast recipe that i forgot about. It will use up some of my extra broccoli too. And I think it uses 8 whole eggs and 8 egg whites. That will take care of 16 eggs!

Meringues! They just use egg whites, though. But they're low in fat!

Panukukken.... I probably spelled that wrong- but German pancakes..... I am not at home. My recipe (which makes a 9x13) uses 6 eggs.....

I was thinking deviled eggs too... yum! I'd definitely boil some and eat them warm or cold with just salt & pepper. I'd also have some every day for breakfast. I keep meaning to make me some eggs in the morning but I keep sleeping in too late... lol. Good luck.... cluck, cluck!
