What are some of your favorite crock pot meals?

I like ones that I can portion out and freeze for easy meals later on.  I currently have shredded chicken taco meat in the freezer, I break off a chunk to make chicken tacos and quesadillas.   I am trying Buffalo Ranch Chicken today, mainly for one of my twins who loves Buffalo wings.  It's 3 lbs of boneless chicken, a bottle of Frank's Buffalo sauce and a packet of ranch dressing mix.  I saw it on Pinterest last night and thought it sounded good.  Smells good so far!   I'll shred it,  portion it out on a cookie sheet and freeze so it will be easy for him to reheat single servings later on.  

I also like to cook a roast in beefy onion soup mix all day, and then mix in BBQ sauce with the meat when it's done.  Makes really good BBQ beef sandwiches, and freezes well also.

I did a lemon garlic chicken about 3 weeks ago that turned out fabulous and a simple beef stew last week that also turned out well. I need to find some good freezer meals to throw right in the crock pot, but its still a bit hot here in the south, so I am waiting a little longer before putting the crock pot on regular rotation again.

Have you seen those recipes on Pinterest that cook up something like 12 freezer crock pot meals at a time? Some of the recipes look pretty good.

I have done some modified Once a month meals, I posted the link in the sports dinner meals thread. And they have worked well and I really like to do it when I have time to do it. I haven't done a ton of crock pot meals like that, but once it starts cooling down more, I probably will start doing it more often. We are a bit picky at our house, so making sure I find recipes everyone likes sometimes is a challenge. We do tons of soups in the winter though.

I was just thinking that I need to stock up on soups! I've gotten to the point that I can even eat store bought soup, unless it's from the deli. Last year I made a really yummy creamy ham and potato, and chicken noodle. I need to pick up a chicken this next weekend :)

Ham and potato sounds wonderful!  I'm excited that its supposed to get down into the 70's this weekend so I am making chili in the crock pot for my parents visit after we get back from the pumpkin farm. 

I"ve made this chicken pot pie before and it turned out great.  I did it in the crock pot with left over shredded chicken, left it in all day, and just added the slurry when I got home and let it thicken up for a few minutes.  The only other thing I changed was I omitted the mushrooms and added in lima beans instead, the kids all ate it right up.:

Chicken pot pie soup sounds good.  I agree, though, kind of been waiting for the weather to dip down more consistently to get out the crockpot and be serious about it! Supposed to get cold later this week, it's about time, it's December!  I would love to try a pea soup recipe- one that the kids will try perhaps??
