Looking for some suggestions for a quick chicken soup

Hi! Anyone have a suggestion/recipe for a quick chicken soup — I'd like to use a rotisserie chicken (to make it quick! lol). I'd also like to keep it low sodium.

Use a low-sodium roasted chicken.  Take the meat off the breast, thighs, drums, and wing drumetts, and set aside.  Put EVERYTHING else -bones, skin, wing tips, etc- plus any liquid that has drained into the bottom of the plastic carry box, into a pot.  I add an UNPEELED small yellow onion, cut into quarters; 1 carrot, washed but not peeled, cut into a few big pieces; and one rib of celery, washed and cut into a few pieces, 1 smashed clove of garlic, and a good pinch of parsley.  Then add cold water to cover, and about 1/2 cup more.  Bring to a boil, then turn down and simmer for about 45 mins, or until the corpse falls to pieces.  Then strain, discard the wreckage, adjust seasonings, and there you go.

At THIS point, the stock is finished.  If desired, you can add a handfull of dry orzo and boil till soft, or add leftover cooked rice, cooked pasta, some of the reserved chicken, a little more parsley, whatever.

Whenever we have a rotisserie chicken, I always make stock from the corpse, and freeze it.  We usually eat the wings and legs for dinner, and save the breast for chicken salad the next day.  One chicken goes a LOOONG way.
