What's cooking tonight?

I laid out a roast.  I'm going to cook it in the Dutch oven this afternoon and then make gravy to go with it.   We'll do some sort of potatoes too and likely green beans.  I also have salad stuff.

Oh my, I haven't had porcupines in YEARS!  Yum!

I made some beef broth yesterday and canned some.  I promised beef and noodles this evening.

I was going to do the prep last night to throw something in the slow cooker for dinner tonight.... but I was too tired, lol. plus it has to be low sodium today, because of tomorrows weigh in... DH has a doctors appointment today and his Dad has volunteered to take him, and they are gonna go to costco after, I asked DH if he could pick up a chicken! so chicken, sweet potato, and salad! sorry that was long winded! LOL

I have not made them in years either Susan.  But I have been wanting to try the roasted cabbage recipe I "pinned" and was trying to think of something to make with it.  Bingo - pocupine meatballs!  Sort of like stuffed cabbage without all the work!

Super simple to make, this healthy side dish packs a crunchy, flavorful punch.

What is porcupine meatballs? Sounds interesting. I'm not sure what we're having just yet.

rice in your meatballs.  The rice sticking out of the meatball makes it look like a porcupine.  My mom always made hers in a tomato based sauce.  Sandy - how do you fix yours?

Same way Susan.  But I might use a jar of Marinara sauce because I think that is all I may have on hand.

marinara sounds good.  I was just wondering about more of a beef gravy sauce.  Just looking for alternatives as I'm not a big tomato person anyway.
