What’s cooking tonight?

I have a whole chicken laid out.   I haven’t made a roasted chicken in a while.   I am planning on inverting it on a Bundt pan and roasting it with some beer poured in the pan.   I’ll pull the skin off and season it with seasoned salt and some white pepper (never liked black pepper).

Sides, I am thinking the carrot, broccoli, cauliflower blend I have been pan sautéing with garlic.   I need to use the broccoli and cauliflower before they get gross.   I also have some wild rice to make as well.

They might, Cara.... but it was a very thick batter and did not rise too much.  I think if you did put a dollop on a cookie sheet, it might make a pretty thick cookie...

I've been meaning to try those! The recipe I saw made cookies though, not muffins. Maybe if you put them on a cookie sheet, they flatten out more and become cookies?

I went to the grocery Sat and sun too... what a place it was !

Corn on the cob- sounds good!

We had leftover Superbowl food- had both Kynsie and Dominic here... And a fire in the fireplace !

I went to the grocery store on both Saturday and Sunday and was very surprised at how not corwded it was.  It was busier last weekend.

I didn't want to go anywhere near a food store on Superbowl weekend, and being single and retired I didn't have to.  I decided to go to Kroger today.  They had nice-sized, whole chickens with today's pull date marked down to 58 cents a pound.  It wasn't on my list or on my menu plan, but I'm not one to pass up such a deal.  4.33 pounds of chicken for $2.50.  I can eat off of that for days!

But because it has today's date, I'm cooking it today.  Roast chicken in the oven now.

And they had corn on the cob marked down to four ears for a buck.  So - guess what else?

I was going to reply to this earlier...but got called into work..... went to costco for cat food afterwards, and was hungry, so we each had a hot dog, and shared a poutine! was so good!!! so we wont be very hungry for dinner... might have some toast or something light later on....

Well, the restoration/cleaning company are supposed to be at the house working in the basement today... not sure what time they will stop and I really do not want to cook in the kitchen with them trapsing up & down the steps and walking through there.  So, I will probably make us some sandwiches and/or warm up the taco dip and spanish rice leftovers from the SuperBowl party at Mary's last night.

bad, bad Susan didn't get anything out.  I can't use the easy backup plan - tacos, because the girls are having that at school today.  We have buns at home...maybe some type of sandwiches.

We both really like the stuff.  It comes out different almost every time.  You need to be sure you smash it but not turn it into liquid if you use a food processor.

You know, I have been wanting to try the mashed potato/cauliflower clone.   I may do that tonight to see if the kids will eat it.   I know I'll like it.   DS is not much of a mashed potato eater, so he may not eat it, but DD likely will.
