I pulled out some chicken breasts. I'm looking at oven fried (baked) with brown rice and mixed veggies.

Butternut squash and kale lasagna from the current issue of Cooking Light. The dish was tasty enough, but the recipe developer did an awful job. Dirtied up a lot of utensils and took up lot of woking space. Ingredients in odd weight amounts instead of measuring cups and spoons. Called for a glass casserole dish in a 450 oven. Ummm - you can't do that! Even at 450, the baking time would not have been long enough. I baked it three times as long at 400.
On the bright side, I now have three more full meals made for later in the week.
And while the casserole was baking, I cooked two chicken breasts in the same oven to make chicken enchiladas for Amy and the boys on Wednesday.
I think I'm set for the week!
MMM Beef and noodles sounds good..
John had my leftovers from yesterday- he took me out to lunch. I had a rueban and it was huge,
And I ate Mollys leftovers from Sat - Red Lobster. She had chicken parm. Still not sure how I ended up with it !
I'm thinking beef and noodles.
Just me and Webster tonight. He will have his usual kibble and I am not sure what I will make for me. Got lots to pick from since I stocked up at the grocery stores this weekend.
Spaghetti and salad here! ( unless I go out with MIL and SIL, then we are going out to dinner)
