What's cooking tonight?

I am grilling chicken breasts in Caribbean marinade.   We'll have that with rice and fresh broccoli.   I'll probably steam it with lemon juice.

Well I thought there might have been leftovers from last night's dinner for me but nope.  All gone.  Need to rummage through the fridge and freezer to find something for me.

I'm not sure at this moment that I'll even be home tonight. With Amber sick, I'm going to go over there tonight and stay til the kids go to bed. She is vomiting continually and Nick just left to go to work. Will probably have my hubby pick me up something and eat it when I get home. I am sure any kind of food smell will get her going again.... and just in case you were wondering... NO, she is not pregnant.... she still has that merina thing in... for now anyway...

We ate the jerk chicken on our honeymoon in Jamaica and if I remember correctly, it was very good!

What kind of rice?  We play with rice a lot here (I'm on the very edge of rice growing country) and my daughter has buddies from India, China, and Honduras.  I have long grain on hand (my Cajun and Asian staple), as well as Basmati and Jasmine.  I love them all, but each has its own personality, flavor, and compatibilities.  

LOVE MY RICE!!!

I much prefer plain ole Uncle Ben's long grain white rice.   But I have been cooking brown rice almost exclusively lately.   I have also cooked jasmine rice and saffaron rice.

Oh Karen I could eat rice with you all day long!  I love it all too.  A love wild rice, brown, long grain, short grain, Basmati, Jasmine - mmmmmmmmmmmmmmmm!  Trader Joe's has a combo one they call confetti rice.  It has them all tossed together.  For us the Trader Joe's frozen rice works out great.  I get all different ones.  they come three bags to the box, 2 cups to the bag.  Just enough for the two of us.  It is so simple to make.  Just toss in the micro for three minutes.
