What's cooking tonight?

I am grilling chicken breasts in Caribbean marinade.   We'll have that with rice and fresh broccoli.   I'll probably steam it with lemon juice.

That rice combo looks delicious, Sandy.... i really wish we had a Trader Joe's or a Whole Foods place near me. Closest one is an hour away! Boo!

I am a big rice fan too but I have to admit that I do not cook it much.  I have used the Uncle Ben's Brown Rice in a packet that you just warm up in the microwave and it was pretty good.  I do not recall having very many versions of rice (basmati, jasmine, etc.) ... I may have but just never realy known it at the time.  Rice is rice to me, I guess.  Even brown rice tastes pretty much like white rice to me. 

Whenever I need cooked rice for a recipe, I will use the Minute Rice or the Uncle Ben's microwavable brown rice packets because I have heard that regular rice takes a long time to cook and I pretty much hate cooking a dish in order to cook another dish!

I did not like rice as a kid because Mom was cooking 3 minute rice and putting butter and sugar on it.  She put sugar on lots of things "so the kids would eat it."  I did not like sugar.  So I did not know I liked rice until I left home.  In the 70's all the hot steakhouses and upscale restaurants had ONE THEME:  Wild rice and broccoli, with everything. I loved it.  

When I got married I asked my new groom what he hated.  He said, "rice and pork chops."  I made my rice and pork chop casserole and it became his new favorite dish.  It never hurts to give another cook a chance to change your mind!

Basmati is my favorite. We have so many different kinds of rice easily available now - the only rice Mom ever made when I was growing up was white, starchy Minute Rice. I liked it well enough then (hello, carbs!!!), but can't imagine eating it now.  My dad did not like rice, so we only had it if there was something really saucy to put on it. I never liked the sauce, though. I think my dad has since discovered that he doesn't like Minute rice, not ALL rice. He likes the wild rice blends pretty well.

Count me in on the rice-fest too.   I love it.   Chicken and rice is my favorite meal: anyway you can cook chicken or any variety of rice.

I stand corrected on the marinade I used last night.  This is what I had in the fridge:

Oh Karen I could eat rice with you all day long!  I love it all too.  A love wild rice, brown, long grain, short grain, Basmati, Jasmine - mmmmmmmmmmmmmmmm!  Trader Joe's has a combo one they call confetti rice.  It has them all tossed together.  For us the Trader Joe's frozen rice works out great.  I get all different ones.  they come three bags to the box, 2 cups to the bag.  Just enough for the two of us.  It is so simple to make.  Just toss in the micro for three minutes.

I much prefer plain ole Uncle Ben's long grain white rice.   But I have been cooking brown rice almost exclusively lately.   I have also cooked jasmine rice and saffaron rice.

What kind of rice?  We play with rice a lot here (I'm on the very edge of rice growing country) and my daughter has buddies from India, China, and Honduras.  I have long grain on hand (my Cajun and Asian staple), as well as Basmati and Jasmine.  I love them all, but each has its own personality, flavor, and compatibilities.

We ate the jerk chicken on our honeymoon in Jamaica and if I remember correctly, it was very good!
