What's cooking tonight?

A while back Jeff bought a half a hog.   He gave me some of the meat.   I found a small package of those pork chops in my freezer.   It's just DS and me for supper, and only 2 chops in the package, so it's perfect.

I will marinade them in Hawaiian marinade, serve with brown rice and peas.

Stuffed peppers.  I put them together yesterday.  I will just have to bake them in the oven when I get home tonight.

I have some steak cooking in the slow cooker... I found this recipe last night... doing a modified version of it... will still be making sandwiches, but will have lettuce on it instead of peppers and onions... (sounds too slimey to me lol)

Erick smoked a couple of pork butts on Saturday - stocking up our freezer and prepping for my girls weekend contribution the first weekend in May. So, pulled pork sandwiches for dinner tonight.

DH is grilling steak and I'm making roasted herbed red potatoes, rice, and corn.  Oh and I can't forget the applesauce!  lol

Cara I'll bet all the girls on your girls weekend trip can't wait to see your contribution. I know I would be peaking under the lid of whatever came with the gal that's married to a chef!!! ROFL!

I made a new to me recipe... chicken fajitas.  I just sliced up chicken breasts, onions, a can of diced tomatoes (drained), a small can of green chili's, garlic powder, salt, pepper, chicken seasoning and put it all in a baking dish and cook at 400 for 25 minutes.  Everything you want in a fajita all done in one pan at one time!  I did not add the green peppers because they do not like me at all... it was pretty dang good.  I served it with flour tortillas, cheese and sour cream.  yummy!  Hubby took the leftovers to work with him for lunch today.
