Hi Tracy,

I'm new to this section of iVillage so I'm not quite sure what all gets discussed but in keeping wiht Quick and Easy, I realized I had something I could talk about.

My husband accidentaly bought a box of Prince Quick Cook Rotini.  It cooks in three minutes rather than the typical 12 or so.  They are smaller so it doesn't take as long to cook.   I wasn't sure how it was going to be but I was surprised that they actually came out really well and it was really quick.

Pasta is my typical quick and easy and when I want to make a really quick mac and cheese, after I've drained the pasta I put it back in the pot and put in a little butter and slice up some cheddar cheese and stir it over the heat until everything is nicely melted.  At times I toss in frozen mixed veggies or left over meat or chicken and in a couple minutes it's good to go.   I guess it can be considered a casserole in a pot.

I like cream sauces but they take a bit more time so this is my quick way to do it.

Heartbreaking, isn't it Gaye. This area has always been a fun, helpful resource for me. And a huge part of my life. 8 months later, "We're working on it" just sounds tired.

Welcome, Zoe. I am so happy you came over here to keep me company. We used to discuss all sorts of stuff here. And some of it pertained to cooking. That pasta sounds like the fix for a Q&E meal for sure.

We used to compare notes on what everyone was cooking for supper that night. With a group of 12-15 regulars, that conversation was pretty long. Then 5 of us all had a day assigned to us and on that day you posted a Question of the Day. And we never missed an opportunity to take a conversation to the gutter. Not once.

Well, I finally got logged in too!  I've had my computer in the shop, short handed and a new trainee at work, and have not been able to log in from work.  

I recently read an article that fascinated me about pasta.  Check this out!  Instructions for starting pasta in cold water, less water, even soaking it and keeping it ready to go in the fridge!

THose pasta ideas DO sound interesting... I just may have to try a few too! 

Zoe, good to see you here on Quick and Easy Recipes... I hope that you will come back often.  I add things to mac & cheese too... but most often leftover taco meat.  It's very tasty!

I miss iVillage... a lot.... and I hope that my ability to post continues and that everyone else can get back in too very soon!  I miss ALL my Q&E gals!!
