So Evey has done a lot better with eating her proteins since she started OT but I was wondering how you ladies got your kids to try new things, especially veggies. Evey is a texture kid so she will eat raw carrots, cooked carrots, and salad. I want to expand her to something green other than lettuce. Any advice?

Dont fuss or fret  and eat with her is the common  advice here.    So if you want here to eat peas then eat peas with her and make it normal, how ever it will take about  8- 10 times before she will even try a pea  but that is normal.   And re introduce  food she has refused  a few months later because sometimes they will like it later due changes in taste buds reseptors.

have you tried any other veggies?  Just give them to her- a few at a time and see what she llikes and doesn't like..

green beans are in season !

brocolli- try it cooked and raw- see what she likes..

Hmmm.... The parent's eternal challenge. First, I think you are doing great by introducing them (fruits and veggies) in her meals. I was determined that I was going to run my kids, not let them run me. That was in all things, not just meals, but meals is a time where they can show independence and voice opinions. You are doing fine.

I think the best thing is to eat with them. That'swhere they get the choice: carrots or broccoli. You can dip with ranch or honey mustard. Choices, but all healthy options (okay, maybe the ranch isn't healthy, but just make sure they don't put tons on their veggies). And my kids see me eat it too.

If they don't eat the healthy stuff, there is no other option(s) other than different healthy stuff. Supper here always has a veggie. If they don't eat it, there is no dessert. And dessert isn't always sugar-y.

I'd try raw broccoli and celery. My son loves those. Cauliflower too, but it's not green. My kids will always eat green beans, broccoli, peas, and salad. I like asparagus but never cook it. I never like it when I make it. So the kids never see me eat it and in turn they don't eat it. Watching you eat it is huge.

All that said, my parents ate veggies and I was picky about them. But I always liked spinach and broccoli so I ate tons of it. My mom figured broccoli every day was better than no greens. I saturated my spinach in cider vinegar. Mmmmm ...

We did that thing last winter, inspired by Chopped, where we all three tried a new to us fruit or veggie every week.  And we all three tried our item. We picked it together at the grocery.  That was fun. We need to do that again.

Sounds like you are doing well with her. I love that she eats salad. My kids didn't start that until ages 4 and 6. I was in high school before I ate it. I was missing out. 

But if she likes a crunch, I'd stick with the broccoli (raw), celery, cauliflower, and maybe bell pepper strips.
