I need inspiration for tonight.   I am on food overload and nothing sounds good.  

Pork chops?   Meatloaf?   Pizza?   Tacos?   Oven fried chicken?

Dinner tonight?  Not sure.  I have a bunch of stuf in the freezer.  Most the leftovers are gone.  It is going to be coming down "Angel Poop" .  I think perhaps somthing on the "pasta" side.  But that is subject to change.

I dunno.  I have absolutely no leftovers of any kind.  Because it is so cold outside, I was leaning toward pasta of some kind.  But I get several recipe feeds on my e-mail, and there was one with a bunch of breakfast casseroles that looked really good.  Hey, there is no law that says I have to make it for breakfast!  Comfort food to the n'th degree!

trying a new recipe.  I've never made fried rice before.

Easy Chicken Fried Rice

Serves 2

Ingredients:
2 cups prepared rice (I used long grain brown rice)
1 chicken breast, cut into bite-sized pieces and seasoned with salt & pepper (could use leftover cooked chicken)
1/2 cup frozen mixed vegetables
2 green onions, chopped
1 clove garlic, minced
1 egg
3 teaspoons sesame or wok oil, divided
2 Tablespoons soy sauce

Directions:

  1. Whisk egg with 1 teaspoon oil in a small dish then set aside.
  2. Heat 1 teaspoon oil in a large wok or skillet over medium-high heat. Add seasoned chicken then stir fry until cooked through and remove to a plate. (If using pre-cooked chicken, skip this step.)
  3. Heat remaining teaspoon oil in the wok then add frozen mixed vegetables and green onions. Stir fry until tender, about 2 minutes, then add garlic and cook for 30 more seconds. Push vegetables to the side of the wok then add egg and sesame oil mixture into the center and scramble.
  4. Add cooked chicken, rice, and soy sauce to wok then toss well to combine.

Light dinner and cocktails in the bar!  They have a fabulous Dungeness crab mac and cheese - I am thinking THAT. We are packing stuff for the boys to eat back in the cabin for both dinners. Innocent

DD asked for pizza from a local place.   It's a little pricey, but mouth-watering.   My kids and I have cleaned and cleaned at my parent's today.   I am pooped.   And I am still going to tackle under my bed.   DD decided it- no cooking for me and pizza it is.

We wentout for mexican for mom's birthday and ate kind of late. I just picked up a mini-milky way candy bar to nibble on.

Cara gets my vote for best dinner last night!

John didn't want anything I had in the house.  He wanted to go out.  It was snowing.  It old him we should stay home but he said it didn't look so bad out.  Well we ventured out and ended up at Olive Garden which is just about 5 minutes from where we live.  It was nice because usually the line is so long we never go there.  There were plenty of people but still plenty of tables too.

I think Cara's meal sounds great too. But Olive Garden does as well.

We were at a wedding- and it was elegant!

Appetizers were meatballs, bruchetta and veggies and dip.. Salad and the main course was turkey, mashed tators, green beans and corn.  Vegetarian lasagna and rolls.  and an open bar =)..

It was good!

Sorry so late but we had TACOS!!  They were yummy!  I finally got some Don Marco's corn tortillas and now I know why I like them so much!  I wish the Walmart or Kroger by me sold them... I'd have to go to Meijer's on the other side of town to get them and I'm not that ambitious.  Sheryl brought them... she has to pass Meijer's on her way here. 

Got leftovers in the fridge... but I am thinking I'm going to use most of it for taco salad tonight.
