What's cooking tonight?

I have a meatloaf prepped ready to go into the oven as well as homemade scalloped potatoes prepped. I used Greek yogurt in the sauce with a little nutmeg. I may have run a finger on the spoon to try it. Yummy!

Now, green beans, peas, or broccoli? That has yet to be decided.

Erick and Tristan are working on dinner now - grilled flank steak, broccoli, garlic bread, mashed potatoes (Erick needs to practice piping potatoes for his certification exam)m spinach salad.

we had roast, potatoes, and carrots in the oven.  We also had bisquick biscuits, green beans, and applesauce.

My potatoes turned out really good.   I sliced a few red potatoes really thin and placed them in a casserole dish.   I then made a white sauce with light butter and skim milk.   I also added Greek yogurt to help thicken it up.  Add some flour and a sprinkle of nutmeg.   I simmered it until it was thick, poured over the potatoes and baked.   They got a crunchy film on the top.   Very good.
