Anything good cooking tonight?
I am wanting to grill since it's so nice out. But I have also had stuffed chicken breasts on the brain. I may try to combine those thoughts and find a stuffed chicken breast recipe that I can grill. I had in mind to mix together low-fat cream cheese with fesh jalapeno, garlic, and lime juice for my stuffing. But would that just ooze out if I grilled? Hmmm.... I don't know.
I'm thinking more ot the couscous I bought on the side as well as a grilled carrot and broccoli mix. I'll toss that in olive oil, salt and garlic before I grill them in a foil packet.

I had a salad, some sweet potato fries and vanilla pudding. I've done well on my calorie count today, still have plenty left over, and that is counting a snack later. I haven't had a Pepsi today. . . all water!!! I have some crystal light packets to use too. I'm kicking butt on this diet thing!!!!
Well let me try it again - baked chicken, salad and another side TBD!

Make sure you are getting enough protein Shelly and be sure you use your calories. You do not have to use the extra ones you get for exercise but you do need to be sure you eat enough. Your body will go into starvation mode and you won't lose any weight. You also need to remember it didn't go on over night so it won't come off overnight.
We had chicken burgers, and oven fries, and some salad.
My grilled chicken was good, but the stuffing did ooze out. I put down foil on the grill to catch it. For the stuffing I mixed reduced fat cream cheese with the juice of two limes, the zest of both limes (they were small) and a minced jalapeño. I tossed the breasts in olive oil, garlic salt and lime zest before stuffing them. We loved them.
Tracy ~ that sounds really good. I am going to write that down and try it when we get home!!!
I think I'd bake them next time to see if that holds the cheese in better. And I'm going to try fat-free cream cheese. I bet you can't tell the difference once it is cooked.
