Any good plans?
Gaye, you are right... you can hide a lot in chili. I have even heard of putting a can of real pumpkin in it. I haven't tried it yet but I have seriously thought about it.
I am not a big meat eater... and I certainly will never be vegetarian or vegan for sure... but I do love my beans! Let us know how it turned out... i love lots of beans in my chili... but the only bad thing about that is the negative effects they have on my husband... lol.
We had stir fried shrimp and vegetables over rice.
^DH^ was a big meat eater. He was also 50 pounds overweight and died of a massive coronary at age 64. After ^DH^ died, I cut my meat consumption in half, and went to one meatless day a week.
Then I started working at the animal shelter and met several vegans who were slim and healthy, Being a food experimenter from 'way back, I've cut back even more on the animal products I eat. I'm not becoming a vegan, or even a vegetarian, and I'm not going to push that on anyone, including my family. I will still make spinach meatballs and enjoy them. Veggies, grains and legumes, however, are filling and cheaper than meat!
Today's experiment: Lentil and bulgur chili. Yum. Face it; you can hide almost anything in chili!
I put Chicken Tortilla soup in the Crock Pot this morning. I never get tired of that stuff.
No plans at all.... not sure what we're going to have to do about the basement. My SIL is there with the guy but I haven't heard anything about what's going on. I could not miss work because of this Open House today that I am in charge of and we could not afford for my husband to miss a day's pay so we called her and she graciously consented to come over to be there when the guy came today. But we were supposed to get nasty weather overnight and she didn't want to drive in that so she came last night and spent the night last night.
I have a feeling we will be eating sandwiches...
