Making chicken burritos tonight. I have chicken that I'm going to boil and shred, mix with some black beans and salsa, corn, shredded cheddar, greek yogurt (sour cream sub) and I'll make some brown rice too. Kids will eat a deconstructed version.

I am not sure yet... still got that taco meat in the freezer but I am hoping my hubby's unemployment check will come in the mail today.

Daisy - do you have the option to do direct deposit? DH has direct deposit and does everything online. He doesn't have to call in to anyone anymore.

I put a roast in the crock pot this morning. I'll make mashed potatoes, try my hand (again) at gravy, and a veggie.

Yes, Susan, we can do direct deposit... but, his crazy employer gave the unemployment people information on for a bank account that we had closed. We moved to a credit union closer to our house and closed the previous account. When he seen online that it had been direct deposited and it wasn't in our new bank account, he called the old one... sure enough, they tried to deposit it but since the account was closed, they sent it back. The next day, he put in our new bank account information on the unemployment website but the next day, he said he seen where it said a debit card had been issued on 1-25-12.... over a week ago but still nothing.... I sure hope it comes today!

Daisy - I forgot to say that DH and I had mac-n-cheese last night for a snack and I was telling him about your taco meat addition and he's said we had to try it sometime because he thinks it would be good!

Oh, it IS good!! Everyone in my family loves it.... I usually serve it with green beans.

Susan.... i wondered why you were using your old Valentine Sig... then I realized I didn't make you a new one. I made 3 winter but I guess I got distracted afte rthat... lol. Go look later on... I'm going to make you a new Valentine sig.
