What's cooking tonight?

Leftovers for me.   We had burgers Sunday night and I have two left.   I'll eat those (no buns) with a salad.   The kids are with their dad tonight and I have to work.  

Yes, the high school basketball season is here.   Feel my cringe through the computer.   Good money, but lots of my time.   And late nights too.   I will work 7:00-10:30 tonight and then a double header Thursday night which will be 5:00- 10:30.   So a 49 hour week for me this week.   Yuck.

Leftovers here too!  I made a turkey pot pie with the leftover turkey from Thanksgiving last night.  There is enough left for one of us plus there is some cube steak and something else in the fridge that can be eaten up. I

I took out a pack of cube steak from the freezer this morning.  BLAH!  To me, there is no more tough or blah piece of meat on the planet.  I will chock it down with mashed potatoes.

I am not real big on cubed steak either, Susan.  It seems like I could chew all day and it would still not be chewed up!  To me it is too fibrous no matter how much they pound it!

Last night, instead of the hot dogs, I made TGOB ... kind of like SOS.... but Turkey & Gravy On a Biscuit.... TGOB!  

So, we will have the hot dogs tonight.

The trick with cube steak is to not over cook it.

Im trying to use up the food we have in the fridge/freezer.... We had pork stir fry, fries, and I found a bag of sausage rolls( ground sausage meat wrapped in puff pastry) sooo good!!

You can't make a silk purse out of a pig's ear.  Cube steak is not worth eating no matter how you cook it.  I stopped buying it years ago.  Hamburger meat is a better choice.

I'm down to picking Rowan up from school one day a week. Wednesday. So I take them dinner only once a week. I made bow tie pasta with ham and asparagus in an alfredo-like sauce. Figured nobody wanted toi see any more turkey, yams, dressing, green beans, or anything resembling Thanksgiving leftovers. :) I actually ate the last of my turkey leftovers tonight, and I'll eat my saved portion of the above casserole tomorrow.

I agree and would never buy it in the store. But when we get our 1/4 beef we always get 4 packs of cube steak and I hate to waste it.

Susan, when I was buying a cow, I was able to choose how I wanted everything cut. I had them grind everything but a couple roasts and steaks. But, we did buy the whole cow... not sure if they let you choose when you buy 1/4 but you should check into it.
