I laid out boneless, skinless thighs. I'm thinking stir-fry. Only thing with that is that the veggies would be very similiar to what we had last night. Ditto the brown rice. I don't think the kids would like it. Or do I care what they think? They are both very good about eating what's put in front of them.
If I do the stir fry it will be with broccoli, carrots, bell papper, and pineapple. I have reduced-sodium stir fry sauce at the house to season it with. I might do that and make the brown rice for me and boil them some egg noodles.
Not quite sure today but I am craving some type of soup.... I really want to try the tortilla soup Tracy makes but I am sure I don't have the stuff. Oh well... I will see what I can whip up with what I've got on hand.
I made tortilla soup last night. I made tortilla soup for Amy and Rowan several weeks ago, and he loved it and requested I make it again. Problem is, I googled tortilla soup, read a few recipes, and went off and did my own thing, so I probably can't duplicate it. I did my best.
I didn't eat it last night; I ate leftover meatloaf and mashed potatoes. So, I'll eat my soup tonight.
Hey Susan, I think I remember you telling meyou liked that sig last year when I used it... lol. I will try to find something similar for you.
I decided to use up some leftover taco meat in the freezer and add it to some boxed macaroni & cheese and have that with green beans... it was pretty yummy! I hope there's some left to take to work for lunch tomorrow.
Erick volunteered (with the Chef's association) to help put out the Governor's Inaugural Ball food - so we are FFY'ing it tonight.
Not sure what/who he will be working with, but I expect he will be working with one of the culinary schools, cooking and helping supervise the students. Here is the menu link, if you are interested: http://wastategovball.org/menu.htm#GovMenu
I did make my stir fry. It was great. My kids get tired of brown rice but I don't.
Cara, that's an "I'd starve" menu. I am assuming that you can't ask the chef to put the steak tartar in the microwave for a few minutes. It's be fun to watch his/her reaction though.
What's cougar cheese? That one has some potential for interesting conversation.
"Potato-Apple and Dill Garlic Cougar Cheese Salad"
"Stuffed baby potatoes Black Pepper and Chive Cheese Cougar Cheese"
"Apple Galette Filled with organic apples American Cheddar Cougar Cheese"
I would like the hazelnut encrusted halibut cheeks, but yuck-o on the chickpea puree and tomato and onion sides that come with it.

Either a stir fry or pork chops.
