I just got a text that softball practice was moved to tomorrow night.  So DD and I will do something quick, maybe grilled chicken breasts topped with pesto, and head out to go back to school shopping.

We had cube steaks, steamed fresh beets topped with goat cheese and walnuts, fresh tomato slices with balsamic vingegar.

Sandy, I was watching Giada yesterday and she cooked fresh beats to add to a salad then also added goat cheese and granny smith apple slices.... it looked really good. I've never had fresh beats with goat cheese, I'm going to have to try it.... but, I think I'll start with canned beats just to see if I like it... lol.
