My friend/DH's cousin is coming over for supper. Yesterday was her birthday.
Beef and noodles, mashed potatoes, sweet corn, applesauce, and salad - CARB OVERLOAD! lol

shredded beef (as much or as little as you like) A good use for leftovers from a crockpot roast
Cook according to the noodle package, add beef about 1/2 through so it can warm up
I googled "beef and noodles" and got a lot of stroganoff type dishes and a lot of chinese dishes. I will have to take a picture tonight!
Jeff took us out for Mexican last night. We walked to the place close to my house. So tonight I am doing the fish, rice, and salad.
Fish pudding with sweet peas and butter sauce. Love it and this time I made it with smoked salmon.
