My friend/DH's cousin is coming over for supper. Yesterday was her birthday.
Beef and noodles, mashed potatoes, sweet corn, applesauce, and salad - CARB OVERLOAD! lol

Looks good, Susan. I still need to try that. But I always cook my roasts with gravy so when I have leftovers I have leftover gravy too. But I could add the gravy too I reckon.
Whenver you say beef and noodles I invision something like this:

Only without mushrooms because, well, yuck.

How do I make stroganoff? I usually don't. Although I do like it.
My roasts are usually cooked in a Dutch oven with gravy. I brown the roast in oil and garlic salt. I then mix together a can of beef broth, can of Cream of Celery soup (hate mushrooms so no mushroom soup), and some flour. I usually add hot water to that too. Then I simmer the roast in that gravy mix, covered, in the Dutch oven on the stove. It cooks for about 2 hours. When it's done the gravy is thick. Great winter comfort food.
