I made what we affectionately call "Cheesy Pot." Before Amber was married, I had my menu plan on the fridge and one night I abbreviated and wrote "Cheesy Pot".... short for "Cheesy Potatoes w/Kielbasa." Well, she started calling it that and now we all do... lol. Sorry if I've already told that story!
This is how scatterbrained I've been lately.... I went to the store specifically for stuff for Cheesy Pot. I bought everything.... even down to another jar of dehydrated minced onions.... and when I got home, I realized I had not purchased the stinking kielbasa!!
Ugh.... I've had cheesy potatoes before (with no meat in them) but it was for a side dish and I knew Ash and my hubby were not going to like that since they are both meat eaters. So, I considered putting chopped up pepperoni in them but I didn't really have that much... only a few slices. I also considered putting in the ham that I have in the freezer left from Christmas but Ashleigh will not eat ham (she got sick on it once).... so, I had to improvise.... I made her a 1/4 of the cheesy pot with the pepperoni and I made 3/4 of it with the ham! Had enough to send leftovers with both me & hubby for lunch today.

Well we ended up at California Pizza Kitchen . Ok by me since I was paying - roflmao!~!!!!!!!!!!! Now I am on to play "Nancy Nurse" -

I made a modified recipe from something I saw on Pinterest. I made bacon wrapped chicken breasts. I used turkey bacon and reduced fat cream-cheese. I pounded the breasts flat, sprinkled seasoned salt on them, then laid them each on a few pieces of bacon (4 pieces per breast). I then mixed garlic powder in the cream cheese, and softened it. I put a blob of that on each end of the breast. Pull the bacon up, secure with toothpick, and bake. They were great. We had that with skillet fried potatoes (not my favorite so I didn't have many) and salads. I would have made the crash hot potatoes but there wasn't room in the oven.
Well a bit of a change of plans. John is feeling ok but not terrific. We will save the fancy expensive dinner for another time and just go out for something light.
Happy Birthday to John! It's my sister's birthday today too. Hope he is feeling better and it was just a temporary thing.
Tonight is the crazy dance schedule night. It will probably be grilled cheese and soup.
I love KY Fried Chicken. I don't eat it often though. Shelly, with P around maybe you will get to start really cooking again.
P was feeling better and went to his rental house at work to pick up a few things. Just got a text from him asking if we wanted Kyntucky fried Chicken for dinner. Of course, anytime I don't have to cook is a plus for me!!!
