Plans for tonight?

Jeff and I are both finally on the mend after both ringing in the new year while sick.   We are going out tonight.   Won't be as nice as we were planning for NYE, we actually talked about stepping out of our box that night and not going to one of the 2-3 places we always go to, but I won't have to cook.   Yay!

Yay, Gus is back. Jeff rallied. We went out and split an order of chicken nachos. We were both still hungry at the time, but not now. Love that.

Jeff called. He's been working two days a week at a gun store since he retired. They did inventory today. He's still feeling sick and he's tired. So no good food for me. I guess that's good for my diet.... I mean modified eating plan.

We will have leftovers if my hubby doesn't complain about it. I sent some with him for lunch today too. If not, he can cook a frozen pizza or something.

Not sure on dinner for tonight.  I am heading up to the hospital around 4 ish to check in on my Dad.  I will either toss something together when I get home after that or maybe we will go out for a quick bite.

Susan I made a pinterest recipe last night.  It was yummy!

Susan, that has been my Taco Casserole recipe since I was a kid.   And I have always used the original nacho cheese Doritos.  It's yummy.   My kids inhale it.

I'm trying a new pinterest recipe.  I'm switching the Fritos out for Doritos.  I'm also going to 1/2 the recipe and cook in a 9" square pan.  I also posted in the main dish folder.

Walking Taco Casserole


1 1/2 lb ground beef
1 pkg taco seasoning mix
Fritos
Shredded Cheddar cheese

Brown 1 1/2 lbs ground beef. Mix in taco seasoning and cook according to directions on package. 





Layer in a casserole dish in the following order: Fritos chips, meat mixture, shredded cheese. Repeat layers once again.





 Bake at 350° for about 15-20 min or until cheese is bubbly.




After removing from oven I added more cheese on the top.

The only downside is when you reheat it the next day the chips are all soggy. Maybe next time I'll do a half size so that way I don't have soggy chips.
